Society Pizza Lounge: A Family Recipe for Doing Things Right
From a Long Island Legacy to a New Standard in Artisan Pizza
Some families pass down photo albums. The Mustac family passed down dining rooms filled with laughter, flour-dusted recipes, and the deep-rooted belief that every guest deserves to be treated like family.
Michael Mustac, founder of Society Pizza Lounge, grew up in the glow of his father Anthony’s celebrated Long Island restaurants, Piccolo Bussola in Westbury and La Bussola in Glen Cove. These were more than just eateries, they were institutions, where Sunday dinners felt like holidays and the standard was nothing less than excellence.
The Roots of Society: No Shortcuts, Just Tradition
At Society, tradition isn’t just a buzzword, it’s the backbone of everything. Dough is made the old-school way: in-house, naturally fermented, and rolled with care. The flour? Locally sourced, unbleached and unbromated. Tomatoes? Whole plum, packed without citric acid or additives. Meats and produce? Responsibly sourced, organic when possible, and never touched by shortcuts.
Michael puts it simply:
“We go beyond farm-to-table, we work farmer-to-table.”
That means knowing where ingredients come from, how they’re grown, and what they’re treated with (or more importantly, not treated with). From the multi-stage filtered water in every recipe to cheeses that are never pre-shredded, every ingredient is chosen with purpose and love.
A Menu That Honors the Past and Pushes Forward
Michael’s culinary philosophy was shaped by childhood memories of rolling dough with neighbors and sneaking meatballs from the pot. But Society Pizza Lounge isn’t about nostalgia, it’s about raising the standard.
At Society, you’ll find:
Signature New York–style pizza made with Maldon sea salt and traditional techniques
Elevated plates with integrity-driven ingredients
Handcrafted cocktails, using house-made syrups and fresh-pressed citrus
It’s food that’s honest. It’s food that connects. It’s food that loves you back.
More Than a Restaurant—A Manifesto
Michael doesn’t see Society as just a restaurant. To him, it’s a manifesto: a living promise that family, tradition, and relentless innovation can create something unforgettable.
Every dish is a nod to where he came from, and a declaration of where he’s going. Whether you’re enjoying pizza with friends, sipping a craft cocktail, or discovering flavors you didn’t expect from a pizzeria, you’re part of something bigger.
